Episode 101: Morning Kickstart: Fast & Nutritious Breakfast on the Go


Breakfast is one of the easiest meals to skip entirely or make poor choices by grabbing fast food choices that are heavy, processed, fried, & fat laden. Not a great start to fueling your body for the day. Let’s fix some quick grabs that have protein, whole ingredients, and the proper fuel to keep our energy up for the day!

Breakfast Bento Boxes

  Shopping List: 

  • Cottage Cheese OR Greek Yogurt of your preference- 1c per box (For Yogurt, I like Oikos and Zoi vanilla) 
  • Fresh Seasonal Fruit: i.e: strawberries, raspberries, blackberries, blueberries
  • Almonds (lightly salted or no salt recommended) 
  • Eggs
  • Container for each day you are planinng to prep for 

Instructions:

  • Hard Boil The number of eggs you need - 1 egg per box. Peel each egg.  Tip: Once eggs are hard boiled, place them into cold water to make them easier to peel.\
  • Wash and dry fruit. Slice strawberries as you prefer.
  • Assemble: 1c of yogurt or cottage cheese, ¼ cup Almonds (feel free to sub any other healthy nut), put about 1 cup of mixed fruit, and 1 peeled hard boiled egg. 
  • Place lid on container. They are good for 4-5 days in the fridge

Protein Pancakewich

  Shopping List: 

  • Kodiak Pancake mix 
  • Egg Whites
  • Seasonal Fresh Fruit
  • Protein of Choice (ie sausage, bacon, turkey sausage,etc)
  • Real Maple Syrup
  • Eggs
  • Cheese of choice (option)
  • Tin Foil

Instructions:

  • Mix 1 cup pancake mix with egg whites (adds extra protein. Just replace the recommended water ratio with egg whites) Add a dash cinnamon & splash of maple syrup to flavor your pancake more!  Cook pancakes. You will need two same sized pancakes per sandwich. Set aside.
  • When making your eggs, the choice is yours:
  1. You can scramble and cook them into a thin pancake that you can fold to fit on the sandwich (1-2 eggs per sammie)
  2. Use egg rings to make egg patties with either whole egg or egg whites.  You can also add some egg whites to the whole egg to make a fluffier egg patty.
  • Assemble: Layer 1 pancake, egg, protein & cheese of choice, top with second pancake. 
  • Wrap each sandwich in tin foil. Place all prepped sandwiches in the fridge. They will be good for 5  days.
